Sugar Free Low Carb Coffee Cake

Sugar Free Coffee Cake!!!

Who doesn’t love an afternoon coffee with piece of coffee cake?!?!  They were made for each other!! Well now you can have a coffee cake with your coffee, and not worry about the sugar!! This amazing coffee cake, courtesy of the brilliant @ketokait_26 and @sarahbellablooms, is made with Good Dee’s Muffin Mix and is perfect for that afternoon snack! Check out the recipe below to make this perfect treat to go with your coffee!

 

Servings: 8 | Prep time: 20 minutes | Total time: 50-60 minutes

 

Ingredients: 

Cake:

  • 1 Package of Good Dee’s Muffin mix
  • 3 eggs
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 tbps Swerve Granulated Sweetener (or sweetener of your choice)

 Topping:

 Directions:

  1. Preheat oven to 350F
  2. Mix wet ingredients as directed on Good Dees Muffin Mix
  3. Add 2 tbps of Swerve Granulated Sweetener to Muffin Mix and set aside
  4. TOPPING - Combine chopped pecans, 1/3 cup Sweetener, 2 tbps melted Brown Butter Ghee and cinnamon and set aside.
  5. Coat a baking pan (I used 9x9) with non stick spray or butter
  6. Add ½ of Muffin Mix batter and sprinkle half of the topping on top
  7. Add the remainder of the batter on top
  8. Sprinkle the remainder of the topping on top
  9. Put mixture in oven for 30-40 minutes, or until a toothpick comes out clean
  10. Enjoy with coffee or however you want!
