Mr. Tortilla was founded after the founders saw something missing - low carb, healthy but affordable foods that doesn't sacrifice flavour. They obviously succeeded and so we have a keto and diabetic friendly, delicious cookie mix that is only 1g net carb per cookie!

I normally would not have purchased but they came as a free gift with my order. I made them up (along with 2 other cookies) for Thanksgiving as my niece is a celiac and diabetic so these cookies give both her and I a variety of desserts...just like the non-keto/diabetic/gluten sensitive family. These hold their shape really well, a little crunchy on the outside and nice and chewy inside. I would have preferred a little more chocolate chips (but that is easily remedied) but they were still good.
I made this package of cookies and they are terrific!!
Ok first of all let me preface this with this is not a product a would normally buy. Too much fibre for us, and Keto baked goods are so hit or miss to me, they are very expensive for a possible miss. They were included free in my order because of a promo.
That said, when I made them decided to go with coconut oil as my fat instead of butter. Because butter is too expensive these days.
Now, I got about 24 cookies from the batch because I went smaller than the packaging suggested. They turned out delicious and the texture was on point. I don’t like coconut oil but it wasn’t really noticeable, maybe because as another reviewer suggested, ‘there may be too much salt or baking powder in the mix’. Whatever, with coconut oil they were great. I was a little apprehensive because of ingredients I don’t normally eat so I only had 2, and waited. My husband waited for my results because his gut biome is way more sensitive than mine.
Results were not great. They didn’t agree with my gut so they ended up being thrown out which is really unfortunate because they were really good.
If you don’t have food sensitivities then these will probably be a big hit. They hold together like a regular cookie, they don’t crumble away in your fingers and the taste is very good.
Love how easy they are to make..can be soft and chewy or crunchy

Only one problem with this mix...it has either way too much salt or baking soda.... The texture and size of the cookies is great!They brown nicely with a bit of a nice crunch but the flavor sadly is much too salty. The salt or baking soda needs to be reduced .I like salt but not this much, the remaining cookies are not edible because of this.Maybe I got a too salty batch?I can't imagine a recipe developer thinking these taste good.
