Dairy Free, Low Carb Breakfast Sandwich

A delicious dairy free, low carb breakfast sandwich using quality ingredients from Canadian suppliers SwitchGrocery and truLOCAL.

Ingredients:

Low Carb Breakfast Bun
1 Bake in a Minute Mug Bread
1 egg
1 tbsp olive oil
1/2 tbsp Buster Rhino's Bagel Seasoning

Sandwich Filling
1 egg
1/2 serving truLOCAL Nova Lox
15g red onion
1/4 avocado 
2 tbsp dairy free Boursin Cheese
Sprinkle of Burlap & Barrel Silk Chili
Salt and Pepper to taste

Instructions:

1. Combine all ingredients for the breakfast bun and stir

2. Microwave mug bread for 90 seconds and set aside

3. Sauté red onion with Silk Chili in a skillet on medium heat 

4. Cook egg in the skillet to preferred doneness (we like over easy)

5. Cut mug bread in half

6. Slice avocado and top on bun with dairy free Boursin cheese

7. Once egg is cooked, place on top of bun

8. Place serving of truLOCAL Nova Lox on the egg and sandwich the buns together
