I love soups this time of year, but sometimes they take so long to make! This vegan friendly recipe made with JOI Cashew Nutbase is perfect because its so quick and easy to make a delicious pea soup!
Servings: 1 | Prep time: 5 minutes | Total time: 20 minutes
Ingredients:
- 1 cup water
- 3 tbsp JOI cashew
- 1 cup vegetable or Chicken stock
- 1 bag frozen peas
- ½ cup mint, dill, or cilantro, or a combination thereof (generously packed)
- 3 green onions, ends trimmed and cut into segments
- 1 clove garlic
- ½ lime worth of lime juice
- 1 tsp Vancouver Island Sea Salt
- Pepper to taste (I suggest Burlap & Barrel Zanzibar Black Peppercorn!)
Directions:
- Add all ingredients to a blender, and blend on highest setting until smooth
- Taste for seasoning and adjust if necessary, add water to thin if you wish
- EnJOI chilled or warm up over low heat in a pot
