Snickerdoodle Cookie Pies with Pumpkin Spice Frosting

The most delicious, Keto cookie sandwiches EVER! With tons of flavour like Snickerdoodle sandwiching Pumpkin Spice Frosting… how can you go wrong? These sandwiches are a tasty Keto dessert that uses Keto Chow and no added sugar! Follow along for this low carb cookie recipe!


Servings: 12 | Prep time: 15 minutes | Total time: 1 hour


Ingredients:


Pumpkin Spice Caramel Frosting Filling


Directions:

  1. Preheat oven to 350F
  2. In a large mixing bowl, whisk egg, butter, and vanilla extract together
  3. In a separate bowl, combine Snickerdoodle Keto Chow, almond flour, cinnamon, and baking Add dry ingredients to wet ingredients in the large bowl and mix well (do not over mix)
  4. On a greased baking sheet, using a tablespoon, scoop out cookie mixture and place evenly throughout the sheet (avoid placing close together as they will expand when baking)
  5. Repeat until you have 12 evenly sized scoops
  6. Slightly flatten 6 of the 12 cookies for the base of the cookie sandwich
  7. Bake in the oven for 10 minutes or until golden brown
  8. Let cool completely before adding Pumpkin Spice Filling
  9. For the frosting filling - using a mixer, beat cream cheese with Pumpkin Spice Caramel Keto Chow until all the powder has been mixed into the cream cheese
  10. You can choose to put the frosting into a piping bag to distribute onto the cookie bases or scoop with a spoon and spread evenly
  11. Place the rounded cookies on top of the filling to complete the cookie sandwich
