Pumpkin Spice Apple Cupcakes

Nothing is more inspired for fall than these far from basic Pumpkin Spice Apple Cupcakes. We used some delicious treats from Good Dee’s low carb baking mixes to create these fall-tastic low carb desserts. This Keto-friendly pumpkin pie, apple cupcake fusion is sure to be a hit for low carbers or anyone who just loves food!


Servings: 12 | Prep time: 30 minutes | Total time: 60 minutes


Ingredients:

1 bag Good Dee’s Yellow Snack Cake Mix

1 bag Good Dee’s White Chocolate Just Add Water Frosting

3 eggs

3 tbsp coconut oil (melted)

75ml pumpkin puree

120g canned apples (chopped)

3 tbsp water 

1 tsp pumpkin spice

½ tsp Burlap & Barrel Royal Cinnamon 


Directions:

  1. Preheat oven to 325F
  2. Whisk eggs, coconut oil, pumpkin puree, pumpkin spice and cinnamon together
  3. Add in Yellow Snack Cake mix and stir until blended thoroughly
  4. Distribute mixture into 12 greased muffin liners
  5. Bake for 30 minutes or until a toothpick inserted comes out clean
  6. While cupcakes are baking, mix JAW Sugar Free Frosting with water and stir until smooth
  7. Place in the fridge for the remainder of baking time
  8. When cupcakes are removed from the oven, let cool completely before frosting
  9. Once cupcakes are frosted, top chopped apples on top of cupcakes
