Low Carb Air Fryer Zucchini Fries

Zucchini Fries are the new French Fries! This quick and easy recipe will be your new go-to fries. We used our favourite Keto bread mix, Bake in a Minute, and the most versatile spices from Burlap & Barrel. No need to miss out on fries when you can make these Keto and Low Carb friendly zucchini fries.

Zucchini Fries

  1. Preheat Air Fryer at 400 F for 3 minutes
  2. Trim the end of a large zucchini, then cut in half and slice into ½ “ strips.
  3. In a medium bowl mix together the Bake in a Minute, garlic powder, paprike, oregano and salt and pepper.
  4. In another medium bowl mix the egg and water
  5. Form an assembly line with the cut zucchini, egg mixture and crumb mixture
  6. Using a fork dip 1 zucchini fry into the egg and coat, allow any extra egg to drip off zucchini before dropping into the crumb mixture
  7. Using a separate fork dredge the zucchini through the crumbs until coated, shake off any excess coating.
  8. Place the zucchini in a greased/oil sprayed air fryer basket.  Do not place too close to each other, you should air fry the zucchini in 2 batches.
  9. Spray the fries with oil and air fry for 7 minutes, gently flip and fry for another 7 minutes.  Times may vary depending on the size of your air fryer and model.
  10. Enjoy immediately as fries can become soggy if sitting out too long due to the water in the zucchini

Zucchini Fries with Switchgrocery Products

Bake in a Minute Bread Mixes are a low carb, grain free bread and keto friendly mix made with almond flour that you can use to make everything from a loaf of bread to crackers, sandwich thins or as breading on meat and veggies!!  

Burlap & Barrel Garlic Powder: is grown by a group of farmers in the mountains of northern Vietnam and has a savory and sweet flavour!  Add it to tomato sauce, stews, salad dressing or sprinkle on top of your pizza or roasted veggies!

Burlap & Barrel Smoked Pimenton Paprika: comes from a single family owned farm in Western Spain.  The peppers are slowly dried over oak coals, giving them a rich smoky flavour.  Sprinkle the paprika over popcorn, mix with other spices for a meat seasoning or add to stews and chili for a delicious flavour. 

Burlap & Barrel Oregano: are sourced from Denizli, Turkey. These Oregano buds are bright and zesty and are hand picked just before they open into flowers.  Crumble into salad dressings, add to roast chicken or marinades or on roasted veggies!

Recipe tips and serving suggestions

What can I serve Low Carb Air Fryer Zucchini Fries with?

Zucchini fries go well as a side to a steak or a burger, just like the usual french fries would.  Use them like you would a potatoe/french fry.  They will go well with this Spicy Chicken Burger Recipe.

How can I store these fries?

Fries should be enjoyed immediately after air frying.  Allow to slightly cool and enjoy with your favourite dipping sauce.  If you want to store them, keep them in an airtight container for up to 3 days.  However, due to the moisture in the zucchini they will become soggy.

What if I don't have an air fryer?

These can easily be made in the oven on a parchment lined baking sheet or wire rack.  Bake at 400 for 20 minutes, flipping them half way through. 

Can I do the same with other vegetables?

Yes, try them with asparagus, eggplant or green beans.  Cooking times may vary depending on vegetables used.

  • These fries are not made to be crunchy.  If you prefer a crispy fry, use ½ cup Bake in a Minute and ½ cup of pork rind crumbs.
