Lemon Cookies



  1. Preheat oven to 325F
  2. In a large bowl, mix all cookie ingredients together
  3. On a baking sheet, spray non-stick spray and place 12 evenly sized cookie dough balls on the sheet
  4. Lightly press the dough down and place in the oven for 10-12 minutes or until edges are golden
  5. Remove from the oven and let cool completely before creating the glaze
  6. For the glaze, combine sweetener and lemon juice together and stir
  7. Pour glaze over cookies then sprinkle with lemon zest and poppy seeds
