Glaze: The glaze can harden within a couple hours. You want to make sure the glaze is made while donuts are in the oven and once slightly cooled you can start the assembly. The glaze is what makes the shredded coconut stick.
Storage: Store in an airtight container and enjoy within 3 days. Alternatively you can freeze the donuts once they are cooled for up to 3 months and top later. Allow the donuts to thaw out of the freezer for 1 hour and then glaze and top with toasted coconut.
Plain donut: You can make these low carb strawberry coconut donuts without the glaze and coconut topping. Alternatively if you simply want a glazed donut you can dip in the glaze without topping with coconut.

Low Carb Strawberry Coconut Donut
These Low Carb Strawberry Coconut Donuts are absolutely amazing. How can you go wrong with the flavours of strawberry and coconut. Super moist (hate that word) and just the right amount of sweetness. Simply made with combining Good Dee's Coconut Snack Cake Mix and a Keto Chow Strawberry. It' doesn't get any easier, yet more delicious than this.
1 pkg of Good Dee's Coconut Snack Cake Mix
1 pkg of Keto Chow Strawberry (reserve 1 tbsp for glaze)
1 tsp Origin Vanilla
4 large eggs
2/3 cup of coconut oil (adding more oil than what the packaging suggests due to the added keto chow dry ingredient)
1/2 cup of unsweetened shredded coconut for topping
1 tbsp of Keto Chow Strawberry
3 tbsp of Coconut Milk (canned)
1 tsp Origin Vanilla
2 tbsp of Erythritol or 12 drops of Sweet Monk
Preheat oven to 350 F
In a large bowl whisk together the eggs, coconut oil and 1 tsp of vanilla.
Add 1 package of Good Dees Coconut Snack Cake Mix and 1 Single Serving package of Keto Chow Strawberry (reserve 1 tbsp for the glaze). Mix until well combined to form batter.
Grease donut pan generously with coconut oil or coconut spray. Scoop batter into a piping bag and pipe into donut pan. Alternatively you can spoon it out and place in donut pan. This recipe makes up to 8 donuts, or 6 donuts and a mini loaf. See photo above recipe.
Bake in oven at 350 for 12-15 minutes. Donuts should be lightly golden. You will know when complete when a toothpick comes out clean.
Remove donuts from oven and allow to completely cool.
Once cooled dip bottom of donuts in the glaze and then dredge in the shredded coconut. See video for how we made them.
