Bacon Cheddar Chive Cornbread

Sweet, salty and savoury Keto-friendly corn “free” bread with bacon, cheddar and chives for full on flavour! Not only a delicious low carb bread, it makes for a great Keto side dish, delicious dipped in eggs, or a quick and easy grab and go snack! We love Good Dee’s mixes like this Corn Free Bread mix because of how easy it is to use and customize. Plus using spices from Burlap & Barrel like the ones used in this recipe, create restaurant quality meals with ease!


Servings: 12 | Prep time: 20 minutes | Total time: 60 minutes


Ingredients:

1 Good Dee’s Corn Free Bread Mix

3 eggs

4 tbsp butter (or 3 tbsp butter and 1 tbsp leftover bacon grease)

1 tbsp Apple Cider Vinegar

60g cheddar cheese (shredded)

3 strips bacon (precooked, crumbled)

½ tbsp Burlap & Barrel Purple Stripe Garlic

1 tsp Burlap & Barrel Turkish Oregano 

10g chives (chopped)


Directions:

  1. Preheat oven to 325 degrees
  2. Whisk eggs, butter, apple cider vinegar, garlic and oregano together
  3. Add in Good Dee’s mix and stir until well combined
  4. Add in cheddar cheese, bacon and chives (save a sprinkling of each for later)
  5. Stir mixture until all ingredients are blended together
  6. Coat a baking pan (8 inches) with non stick spray and pour mixture in pan
  7. Smooth mixture evenly through out pan
  8. Place pan into the oven for 20-25 minutes or until toothpick comes out clean
  9. Sprinkle remaining cheese, bacon, and chives onto cornbread and let cool completely before removing from the pan
