Diary Free No Churn Berry Ice Cream

This Dairy Free No Churn Berry Ice Cream is an easy to make, (no ice cream maker required), creamy and summer fresh dessert.  All you need is a saucepan and a loaf pan to make this berrylicious ice cream.  Made with our Dairy Free Creamer Recipe, Philosophie Berry Bliss, Olive Nation Cherry Extract, egg yolks, frozen berries and coconut cream.  

Super super yum and so simple to make.

  1. In a large bowl whisk together the egg  yolks, vanilla and cherry extract
  2. In a medium size saucepan on medium/low heat add the remaining ingredients except the frozen berries.  Whisk regularly after adding each ingredient until everything is well combined.  Allow to simmer while whisking until the cream thickens and coats the back of a wooden spoon.  About 10 - 15 minutes
  3. Remove from heat and allow to cool.  Continue to whisk regularly to avoid a skin from forming on the top.
  4. Once cooled, slowly add to the egg mixture while vigorously whisking.  (see video).
  5. add the frozen berries and mix
  6. Pour into an 8" loaf pan lined with parchment paper, cover with tinfoil and freeze.  For the first 5 hours give the ice cream a stir/mix.
  7. Optional: add 1-2 tbsp of vodka when adding the berries.  This will result in a more creamy consistency.

Recipe Tips and Serving Suggestions

Berries: Use frozen berries as fresh berries will get mushy.  If your frozen berries are large, try chopping them into smaller sizes. 

Storage: Store in an airtight container and enjoy within 2 weeks. 

Serving: Take the ice cream out of the freezer about 10-15 minutes before consuming.  Trust me, it will be easier to scoop if you do this.

Whisk Whisk Whisk: You will do a lot of whisking while making this ice cream to avoid clumping and that skin on top.  Whisk regularly when it's in the saucepan and while it's cooling to ensure a consistent and smooth texture.

No Churn: This is a no churn ice cream but you still need to give it a whirl every hour for the first 5 hours while it's first in the freezer.  This will help make it creamier and less icy.

Vodka in Ice Cream? This one is optional but adding just 1-2 tablespoons of vodka to the ice cream will help make it less icy.  Since vodka doesn't freeze it will help give you more of a creamy texture.

Frequently Asked Questions

Why did my ice cream turn out so hard?
Generally non dairy ice creams are harder than regular ice creams but it may be because you did not add enough fat to the ice cream.  The coconut oil and egg yolks in this recipe should allow the ice cream to not be too crystalized and balance out the water content.


How do you keep dairy free ice cream soft?
 You can add some liquid sweetener to this recipe.  Liquid sweetener like our Sweet Monk combined with granular sweetener helps to keep the texture creamy.
