Vanilla Chocolate Chip Cheesecake

Get ready for an easy Keto dessert that is perfect for any occasion! With a peanut butter cookie crust and a vanilla cheesecake filling with chocolate chips, you get three delicious flavours rolled into one sugar free cake! Using some of our favourite Keto-friendly ingredients like Fatso Peanut Butter, Keto Chow, and Coco Polo Chocolate, this low carb cheesecake recipe is not only delicious, it can be made in under an hour!


Servings: 12 | Prep time: 20 minutes | Total time: 60 minutes


Ingredients:

Crust

200g OMG Snacks Peanut Butter Cookies (or other peanut butter cookies)

1 egg

4 tbsp Fatso Classic Peanut Butter


Cheesecake Filling

16oz cream cheese (softened)

1 egg

1 tbsp vanilla extract

1 serving Keto Chow Vanilla powder (44g)

1 cup Coco Polo Chocolate Baking Chips


Directions:
Crust

  1. Preheat oven to 350 degrees
  2. Crumble peanut butter cookies, add in egg and peanut butter
  3. Mix crust ingredients together in a medium bowl
  4. Grease a spring form pan and place crust mixture into bottom of pan
  5. Press down evenly and place in the oven for 7-9 minutes

Filling

  1. Mix cream cheese, egg, Keto chow, and vanilla extract in a large bowl
  2. Blend until smooth, then fold in Coco Polo Chocolate Baking Chips
  3. Smooth filling over crust once cooled
  4. Place in the oven to bake for 30 minutes or until a toothpick comes out clean from the centre
