Low Carb Oven Roasted Acorn Squash

The fall season is all about warm spices and squash for us.  Made with some Lee's Provisions Brown Butter Ghee and Burlap and Barrel Ginger, All Spice and Cobanero Chili Flakes.  Simple and easy to make in under 30 minutes.

 Directions to make the Oven Roasted Squash

  1. Preheat oven to 425°F
  2. Cut acorn squash in half and scoop out seeds with a spoon.  Scrape out any stringy bits.
  3. Place half acorn face down and cut into 1/4 inch slices
  4. Place slices in large bowl and set aside
  5. In a medium bowl add the brown butter ghee and melt in the microwave for 30 seconds
  6. Remove from microwave and add the ginger and all spice.  Whisk together until evenly combined.
  7. Transfer the ghee mixture to the bowl of acorn slices and toss until well coated.
  8. Place the slices on a parchment lined baking sheet and brush any remaining ghee mixture onto the acorns.
  9. Sprinkle with chili flakes and salt.
  10. Roast in the oven at 425°F for 25-30 minutes.
