Keto Blueberry Cheesecake made with Keto Chow

We are using our newly launched Keto Chow Blueberry Pie  to make this Creamy and Delicious Keto Blueberry Cheesecake.  It is a no bake low carb keto blueberry cheesecake that will be your summer dessert favourite.

This low carb blueberry cheesecake is a perfect mix of blueberry and pie all mixed up into a decadent blueberry cheesecake that is irresistible.

Blueberry is our summer favourite fruit because it's low in carbs and is bursting with flavour.  We use blueberries in everything like this Berry Bliss Low Carb Protein Smoothie.

Ingredients Notes for the Keto Chow Blueberry No Bake Cheesecake

This easy keto blueberry cheesecake comes together super simple and uses some of our favourite ingredients:

Blueberry Pie Keto Chow - Only 0.8g net carbs per shake and satisfies the people who like the idea of living like a Victorian cottage owner, picking blueberries from dozens of bushes on hot summer days.

Origin Vanilla ExtractPure vanilla extract made using fine, hand-selected vanilla beans sourced from small farms around the world. 

Cream Cheese - for that mild sweet taste and pleasant tang making this keto blueberry cheesecake super thick and creamy. We used full fat cream cheese.

Fresh Berries - nothing like having the real fresh taste of blueberries and raspberries for this delicious and creamy dessert

Heavy Cream - using heavy cream whipped to perfection gives this keto blueberry cheesecake all the creamy delightful texture.

Monk Fruit Sweetener - we used Sweet Monk in this recipe to give it a subtle sweetness without any grainy textures.

Step by Step Instructions

STEP 1: In a large mixing bowl, whip 1 cup of heavy cream until stiff peaks form.  Then place in the fridge to chill.
STEP 2: Place the cream cheese in another bowl and beat until soft, then add the sweet monk and beat until well-mixed.
STEP 3: Add the Blueberry Pie Keto Chow and Vanilla extract to the cream cheese mixture and beat well until all the Keto Chow is incorporated.
STEP 4: Stir in half of the chilled whipped cream and mix well to combine and lighten the mixture.
STEP 5: Add the other half of the whipped cream and fold it in gently to retain the air in the mixture.
STEP 6: Spread the cheesecake into the tart pan and chill until set. About 2 hours.
STEP 7: When cheesecake has set, arrange raspberries and blueberries on the top.
STEP 8: Just before serving, whip a 1/2 cup of heavy cream with 1/8 tsp of sweet monk until it reaches stiff peaks. Decorate the cheesecake with the whipped cream and serve.

Store any leftover sugar free blueberry cheesecake tightly sealed in the refrigerator for up to three days.

Recipe Variations

There are so many different flavours and variations to make a cheesecake, here are just a few suggestions:

Crust: if you prefer you can make and almond flour crust for this cheesecake.  Simply mix together 1 cup of almond flour with 2 tablespoons of softened butter, 1 tablespoon of granular erythritol and a 1/2 tsp of Vanilla extract.  Press and form into the tart pan.  Blanched almond flour is preferred for this.

Keto Chow: the options are endless but we have swapped out the blueberry pie for Strawberry, Apple Pie or Banana and they were all amazing in this recipe.

Are blueberries keto friendly?

Blueberries can be a part of a keto diet as they are low in carbs.  Although you should still limit the amount of blueberries you consume.  A 1/2 cup of blueberries contains 9g of net carbs.

Can I top this cheesecake with a blueberry sauce?

You can, although keep an eye on the added carbs.  You may want to search for a low carb blueberry sauce to use such as this one.  You can also use our Good Good Brand Sweet Blueberry Jam warmed up with some butter and fresh lemon juice to make a quick blueberry sauce.
